Crab Grilled Cheese Sandwich
A few months ago, I made my first ever grilled cheese sandwich. Because I love seafood, I used real lobster meat as part of the filling. It was so delicious! This past weekend, I had a dear friend visiting who wanted to try my lobster grilled cheese sandwich. I was set to re-make this but my local Whole Foods ran out of lobster tails :( To improvise, I bought real crab meat instead.
I was iffy at first (since I have never had crab grilled cheese before). However, it actually turned out really well! I went with a container of Chicken of the Sea (8 oz of fresh crab claw) and might opt to make more crab grilled cheese over lobster since it's slightly cheaper.
Also, with every grilled cheese, you should serve with a small side of tomato soup as dipping sauce! I personally love this Easy Three-Ingredient Tomato Soup by Inspired Taste because, well, it's easy.
Crab Grilled Cheese Sandwich

Yields: 1 serving
Ingredients:
2 slices of bread
2 tbsp unsalted butter (melted)
2 oz fresh crab meat (cooked)
1 slice of Gruyere cheese
1 slice of mild cheddar cheese
Pinch of celery salt
Directions:
Brush both sides of your bread with butter.
On the un-buttered side, add 1.5 slices of Gruyere on one slice of bread. Evenly layer with crab meat, then 1.5 slices of mild cheddar cheese. Sprinkle over with celery salt and place the second bread on top (buttered side facing up).
Heat up a large non-stick pan on medium heat. Once the pan is hot, add the sandwich to the pan. Cover the pan with a clear lid, and let sit for about 2-3 minutes until cheese starts to melt. Careful not to let the bread burn.
Once the bottom bread is nice and toasted, carefully flip the sandwich over. Cover the pan with the clear lid, and let sit for another 2-3 minutes until cheese starts to melt. Again, careful not to let the bread burn.
Note: If your bread does start to brown faster than your cheese melts, remove from stove. An alternative would be to microwave the grilled cheese for about 5-10 seconds. This will allow the cheese to melt without compromising the bread.
Slice sandwich in half. Eat as is or with tomato soup.
