Coconut Shrimp Tacos

Earlier this year, I had posted a blog/recipe on how to make coconut shrimp. I love eating it with rice or veggies, but I wanted to find more ways to consume these tasty shrimp.

While browsing through the fridge at my work yesterday, I noticed that they suddenly had mangoes for their employees. Random, but I decided to take one home and experiment with a tropical version of tacos :)

I envisioned: coconut shrimp + mangoes + avocados + some kind of lemon aioli. I loved all of these ingredients individually, so why not throw them all together! Needless to say, it was a winner! I loved the coconut flavors married with the citrus! A bit more work than just simple coconut shrimp, but worth it.

Coconut Shrimp Tacos

Servings: 2

Ingredients:

  • 4 flour tortillas

  • 2 tbsp lemon aioli (see Martha Stewart's recipe here)

  • 1 cup shredded cabbage

  • 1 avocado (cubed)

  • 1 mango (cubed)

  • 2 tbsp salsa

  • 12 coconut shrimp (see my recipe here)

  • 2 lime wedges (for garnish)

  • Cilantro (for garnish)

Directions:

  • Follow recipe to create lemon aioli, and set aside.

  • Follow recipe to make coconut shrimp, and set aside.

  • Warm tortilla and place on serving plate.

  • Spread lemon aioli. Then layer cabbage, avocado, mango, salsa, and coconut shrimp on top.

  • Garnish with fresh lime juice and cilantro.

  • Serve, and enjoy!
