(No Pan Fry) Crispy Skin Salmon
In the world of food, one of the few things that gross me out the most is soggy fish skin. While I know that I'm eating fish, I hate it when the fish actually tastes "fishy" (straight out of the ocean). Over time, I learned to mitigate this by pan-frying the skin so it gets crispy. The pan-fry method was fine, but I eventually craved for MORE crispiness.
Then, something happened. I discovered how to use the broil function on my oven. Doh! I discovered that I can can simply throw my salmon in the oven, bake it, broil it, and yield the most crispy skin ever. I love that this method requires no active/standing cooking and no oil splatters!
Crispy Skin Salmon
Prep Time: 5 min
Cook Time: 20 min
Servings: 2
Ingredients:
2 fillets of salmon (~4-6 oz each) (skin on)
2 tsp of olive oil
Salt
Black pepper
Directions:
Preheat oven to 400 degrees F.
Season salmon with salt and pepper on all sides.
Place salmon on a baking tray (lined with aluminum foil) with skin facing up. Drizzle olive oil over both fillets.
Place baking tray in the middle rack of the oven. Bake for ~18 minutes (or a few minutes longer if you prefer more cooked texture).
Move baking tray to the highest rack of the oven. Switch to Broil High, and broil for ~2 minutes or until skin is perfectly crisp. (Important: Make sure you are actively watching so that it does not burn).
Turn off oven, take out the baking tray, and transfer salmon fillets to serving plate.
Optional: Yogurt-Dill Sauce
Ingredients:
1/2 cup yogurt (*I used Plain Unsweetened Pain Cashewgurt)
1/8 tsp salt
1/8 tsp onion powder
1/2 tsp lemon juice
1 tbsp dill (finely minced)
1/2 tsp olive oil
Directions:
In a small bowl, add all ingredients and mix together with a fork.
Drizzle sauce over salmon and/or side salad.
