Lemon Shishito Peppers

Like most people - I love to snack, but I never crave anything obviously healthy (such as carrots, celery, almonds). I always want to grab a bag of chips or fries instead. To find a happy medium, I've been contemplating 'in-between' types of snacks. While I don't have a long list yet, I have recently added shishito peppers! It's savory, tasty, and is full of vitamins (apparently K, B6, and C).

The next step you're looking for an 'in-between' type of bite (aka loophole to snacking), try this very easy and quick recipe!

Lemon Shishito Peppers

Prep Time: 5 min

Cook Time: 15 min

Servings: 2

Ingredients:

  • Shishito peppers (~6 oz)

  • 1 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1/4 tsp black pepper

  • 1/4 tsp salt flakes or sea salt

Directions:

  • Rinse shishito peppers under water and pat dry with paper towel.

  • Add olive oil on a medium pan over medium heat.

  • Add shishito peppers and let sit for about 3-4 minutes (or until the skin is slightly charred). Flip peppers and let sit for another 3-4 minutes.

  • Add lemon juice, black pepper, and salt. Evenly mix all ingredients together. Sauté for a few more minutes until shishito peppers' texture softens.

  • Turn off stove and transfer shishito peppers onto serving plate. Serve as an appetizer.
