Pistachio Crusted Salmon

When it comes to fish, I always appreciate nut-crusted renditions! The main reason is because I'm obsessed with food textures and really like combining anything soft with anything crunchy. Who wants to eat a plate or bowl of just mush anyway?

Take a piece of salmon, add some crushed nuts, throw it in the oven, set it and forget it! In terms of which nuts, you can use almost any. My personal favorites are pistachio or macadamia. They are more expensive but I love their extra buttery taste! Yum...

Pistachio Crusted Salmon

Prep Time: 10 min

Cook Time: 20 min

Servings: 2

Ingredients:

  • 2 fillets of salmon (~4-6 oz each)

  • 2 tbsp unsalted butter (melted)

  • ~1,5 tbsp pistachios (crushed)

  • 1 tbsp breadcrumbs

  • Salt

Directions:

  • Preheat oven to 375 degrees F.

  • Place salmon on a baking tray (lined with aluminum foil) with skin facing down. Season salmon with salt on all sides. Evenly distribute 1 tbsp melted butter, then breadcrumbs, and lastly pistachios over both fillets.

  • Bake for 15-20 (or longer if you prefer a well-done finish).

  • Evenly drizzle remaining 1 tbsp melted butter over both fillets. Serve warm.
