Salt & Pepper Shrimp

Everyone has a favorite go-to dish when they go to their neighborhood Chinese restaurant, right? (If you don't, feel free to borrow mine). For me, I always, always have to order the Salt & Pepper Shrimp! The best part of this dish is being able to scoop up fried bits of garlic and eating it with your rice after you've finished all of the shrimp! Someone please tell me they know what I'm talking about...

Salt & Pepper Shrimp

Prep Time: 15 min

Cook Time: 10 min

Servings: 2-3

Ingredients:

  • 1/2 lb large wild shrimp (deveined; shell and tail on)

  • 1/4 cup cornstarch

  • 1/2 tsp black pepper

  • 1/4 tsp salt

  • 1/4 tsp garlic powder

  • 1/8 tsp chili powder

  • 3 garlic cloves (minced)

  • 1 green onion (end removed; chopped)

  • 1/2 jalapeño (sliced)

  • ~2 tbsp canola oil

Directions:

  • Wash shrimp under cold water. Using kitchen shears, trim tendrils off and cut down the backs of shrimp (keeping the shells on). Drain and/or pat dry.

  • In a medium bowl, whisk together corn starch, black pepper, salt, garlic powder, chili powder.

  • Heat up oil on medium high heat in a frying pan or pot. Add garlic and sauté until fragrant. Dredge shrimp in mixture and add to pan. Let sit for about 2-3 minutes or until bottoms are golden and crispy. Flip all shrimp over, and add green onions and jalapeños to the pan. Let sit for another 2-3 minutes or until bottoms are golden and crispy.

  • Turn off stove and mix together all ingredients. Serve with rice or preferred sides.
