Spam & Egg Musubi
Spam is one of those foods that people usually LOVE or HATE because of its high content of sodium and/or mysterious ingredients. I am one of those people who happen to LOVE it, and will allow myself to enjoy on certain occasions (usually when it's served as a musubi).
For those of you who may be unfamiliar, spam musubi is a popular snack in Hawaii that traditionally consists of rice and spam wrapped up in nori (seaweed). It's delicious and a must try if you're ever on the Hawaiian islands! No trip in the near future? No problem, because spam musubis can be easily made at home! All you need a spam musubi mold (which you can get on Amazon), or by improvising and using the spam container (which you can Google and find how-to videos).
While I've made spam musubis before, I have never tried adding eggs to them! This idea was greatly inspired by a visit to Musubi Cafe IYASUMI during my recent trip to Honolulu, HI. Not only does it add more protein in each bite, it compliments so well since it helps soften the saltiness from the spam.
Spam Musubi

Cook Time: 30 min
Servings: 6
Ingredients:
1.5 cups rice (cooked)
3 tbsp rice vinegar
6-egg omelette (cut into 6 rectangles)
1 can spam (cut into 6 slices)
3 tbsp soy sauce
2 tbsp Mirin (Japanese wine)
2 tbsp sugar
Furikake seasoning
3 square nori sheets (cut into halves)
Directions:
Once rice is cooked, add rice vinegar, mix together, and let cool.
In a small bowl, mix together soy sauce, Mirin, and sugar.
In a medium to large pan on medium heat, pan-fry Spam for about 3-5 minutes on each side until edges are browned. Turn off stove and pour in sauce mixture.
Lay nori sheet on a cutting board or flat surface. Place mold in the middle on top of nori sheet. Within the mold, add rice, then spam, then egg, then rice, then Furikake seasoning. Using the press, push down onto the top layer of rice and carefully lift the mold up.
Tightly roll the nori sheet over the rice and seal with water.
Note: It's best to enjoy spam musubi immediately. However, if you would like to save it within the next few hours, use plastic wrap to cover.
